The use of sodium bisulfite as a sterilizing or preserving agent in wine, within the limitations of section 240.523 of the Wine Regulations, is considered consistent with good commercial practice. Accordingly, the use of sodium bisulfite, for the puposes specified, may be approved by Assistant Regional Commissioners, Alcohol and Tobacco Tax, pursuant to the provisions of section 240.530 of the regulations.
Revenue Ruling 55-603, C.B. 1955-2, 709, which contains a list of materials, additional to those authorized by section 240.529 of the Wine Regulations, for use in the treatment of wine, is hereby modified to include the use of sodium bisulfite in the production of wine.
