Rev. Rul. 66-287

A liquid pectolytic enzyme described as Klerzyme Liquid 100 may be used within the general limitations of 26 CFR 240.524 as a clarifier in amounts not to exceed 1 pound per 1,000 gallons of wine. Klerzyme Liquid 100 contains approximately one-half the enzyme content of Klerzyme 200 which is authorized by Revenue Ruling 64-37, C.B. 1964-1 (Part 1), 567, for use by winemakers to clarify wine in amounts not to exceed one-half pound per 1,000 gallons of wine.

Winemakers wishing to use Klerzyme Liquid 100 in cellar treatment of wine may obtain approval of the Assistant Regional Commissioner, Alcohol and Tobacco Tax, by filing notice as required by 26 CFR 240.1052.
