The use of `Takamine Cellulase 4,000,' a cellulolytic enzyme derived from aspergillus niger, to clarify must or wine, in amounts not exceeding five pounds per 1,000 gallons of must or wine, within the general limitations of section 240.524 of of the Wine Regulations, is considered as being consistent with good commercial practice.

Winemakers desiring to use this product in the clarification of must or wine may obtain approval of Assistant Regional Commissioners, Alcohol and Tobacco Tax, by filing notice pursuant to the provisions of section 240.1052 of the regulations.
