`Fumaric acid' may be used, within the general limitations of section 240.524 of the Wine Regulations, to correct natural deficiencies in fruit and berry wines in amounts not exceeding 25 pounds per 1,000 gallons of wine, provided the amount of fumaric acid in the finished wines does not exceed 0.3 percent. The use of fumaric acid in fruit and berry wines will also be subject to the limitations prescribed section 240.404 of the regulations.
Winemakers desiring to use this product to correct natural deficiencies in the production of fruit and berry wines may obtain approval of the Assistant Regional Commissioner, Alcohol and Tobacco Tax, by filing notice pursuant to the provisions of section 240.1052 of the regulations.
