The use of pectolytic enzymes `Pectinol 41-P' and `Pectinol 42-E' derived from Bacillus Subtilis, Aspergillus Flavus Oryzae, or Aspergillus Niger, to clarify wine, in amounts not exceeding one pound per 1000 gallons of wine, within the general limitations of section 240.524 of the Wine Regulations, is considered as being consistent with good commercial practice.
Winemakers desiring to use these products in the clarification of wine may obtain approval of the Assistant Regional Commissioner, Alcohol and Tobacco Tax, by filing notice pursuant to the provisions of section 240.1052 of the regulations.
