The use of `fumaric acid' to correct natural deficiencies in grape wine and to stabilize grape wine, in amounts not exceeding 25 pounds per 1,000 gallons of wine, within the general limitations of section 240.524 of the Wine Regulations, is considered as being consistent with good commercial practice provided the amount of fumaric acid in the finished wine does not exceed 0.3 per cent. The use of fumaric acid to correct natural deficiencies in grape wines will also be subject to the limitations prescribed by section 240.364 of the regulations.
Winemakers desiring to use this product in grape wines for these purposes may obtain approval of the Assistant Regional Commissioner, Alcohol and Tobacco Tax, by filing notice pursuant to the provisions of section 240.1052 of the regulations.
